This is a recipe that I developed several years ago but brought back this weekend to serve at a dinner that I hosted. I love the combination of flavors and textures. It goes beyond just the lettuce and tomato fare that we can get stuck in during the summer. When fall rolls around, this salad will perk up your sweet-tart-savory-creamy-crunchy tastebuds and provide some welcome salad variety.
Fresh Express was generous and sent me several coupons for free packages of their tasty lettuce and salad combinations. (Keep reading and I'll tell you how you could score a couple of these coupons for yourself!) For this salad, I used the Tender Ruby Reds salad mix, which is a delicate blend of tender baby lettuces. The packaging helps the salad mix stay fresh for a long time.
Tender Ruby Reds salad mix by Fresh Express
1/4 cup green onions, chopped
1 Granny Smith apple, peeled and diced
1/2 cup of blue cheese, crumbled
2 slices of bacon, fried and crumbled
1/4 cup of toasted hazelnuts, chopped
Combine the lettuce mix and green onions in a salad bowl. Just before serving toss with Apple Maple Dressing (see recipe below). Serve on individual salad plates and top with the rest of the ingredients. Serves four.
1/8 cup apple cider vinegar (good quality)
1/8 cup vegetable oil
2 T. pure maple syrup
1 t. smoked paprika
Salt & pepper to taste
Combine the above ingredients in a small jar, cover and shake to combine. Chill in refrigerator until time to serve. Shake again before pouring over salad.
